3 DELICIOUS AND SIMPLE SUMMER DISHES FOOD Lifestyle blogger Honest Mum brings you three delicious recipes to serve and try out this summer, and we give you our top tips on which of your favourite drinks to pair it with. This salad is fresh and fruity, with a kick of basil, and therefore goes perfectly with your gin & tonic. This homemade coleslaw is the perfect side to your BBQ, and also goes brilliantly with your Pimms. • 1 cucumber, chopped • 3 handfuls of fresh basil leaves, chopped • 1 pomegranate, peeled, seeds removed • 4 slices of watermelon • 60g feta cheese • 4 tablespoons Extra Virgin Olive Oil • balsamic glaze/lime • pinch rock salt • freshly ground pepper • 400g white cabbage • 1 whole red onion • 2 spring onions • 2 medium carrots • Handful of parsley/coriander for a twist • 250ml Greek yoghurt • 2 tbsp. full fat mayonnaise • A drizzle of Extra Virgin Olive Oil • 1/2 fresh lemon or lime • 2 tbsp grainy mustard • a sprinkle of chilli flakes • Salt & Pepper In a bowl place all the ingredients together, adding the cheese last. Finely slice the white cabbage, red onions and spring onions. Grate the carrots. Fine- ly chop the parsley. Add to a medium sized serving bowl. Drizzle the olive oil, balsamic glaze and season. In another bowl mix the yogurt, mayon- naise, oil. lemon and mustard and add to the veg mix. Season with salt and pepper. 21 • Dawn Magazine • Issue 01 At the end of a beautiful summer day, sit down, relax, and enjoy this mouth-watering chocolate mousse, perfectly paired with a glass of Torres Floralis Moscatel wine. • Serves 3 (multiply for more) • 60 g unsalted butter • 100 g 70% baking chocolate • 2 tsp honey • 350 ml Fresh double cream • 2 tbsp cocoa powder • A drop of vanilla extract • Berries for decoration Melt the butter, honey and chocolate. Then whip the cream and add in the cocoa and vanilla extract and stir. Pour in the butter and chocolate mixture and stir through. Keep whipping until it thickens into a mousse. Pour into a serving glass and refrigerate for an hour or more. Serve decorated with berries.
