Directions:
1. Whip up whipping cream in mixer until
soft peaks begin to form.
2. Fold in mascarpone.
3. Mix in 1/8 cup coffee grinds. Then while
mixing over low speed, slowly add about
1.5 cups of the confectioner’s sugar 1/2
cup at a time, being careful not to over-
whip frosting.
The Assembly:
Put some frosting into a pastry bag and
pipe onto the cupcake.
Make it Easier!
This cupcake would be great with any
frosting! If you dont’ have time to make
your own frosting, try a cream cheese or
vanilla! Add a little bit of whipping cream
in your mixer to store bought frosting for
a smoother pipe!
