Professional Foods (Cum Laude Recognition) This course is designed to teach the fundamentals of the Foodservice Industry. If becoming a Foodservice Professional or working in the growing Hospitality and Tourism Industry is a goal of yours this class will start the journey. We will cover the business and the 'back of the house' sides of this industry. In this hands-on class you will have a chance to practice a variety of techniques in quantity food production. Youth Apprenticeship - Health Services: 1 credit Prerequisite: Senior standing and Medical Occupations Survey, Medical Occupations Terminology, and/or Certified Nursing Assistant (Youth Options through Madison College) Students who enroll in this program are interested in pursuing a career in the health services area and are currently enrolled in the Certified Nursing Assistant (CNA) course. The students can be employed in any healthcare institution that can work with the student in attaining the youth apprenticeship competencies. They should also provide a mentor who is willing to work with the students.This is a one year program with students in paid training 450 hours minimum for the one year program Students usually receive 1 credit per semester for the classroom and work based training. Pay is determined by the youth apprenticeship employers.Students in the one year program must complete a minimum of one specialty area. The specialty areas for this program are: Health Care Foundations, Health Information Management, Medical Assistant, Nursing Assistant, Pharmacy Technician. For students interested in the health care dietary area they must have taken Foods I and are currently enrolled in Advanced Foods, and/or Professional Foods. They will be employed in the dietary areas of nursing homes, residential care facilities or a hospital. This is a level 1, 1 year Youth Apprenticeship that is a great experience for anyone considering a dietetics career. Youth Apprenticeship - Hospitality: 1 credit Prerequisite: Senior standing and has taken Foods I and are currently enrolled in Advanced Foods, International Foods and/or Professional Foods. This is a program for seniors who have a career interest in the hospitality field. The student can be employed at local restaurants, institutions, fast food, delicatessens, and school food service. They need to work preferably a minimum of 10 hours a week. The time depends on the student's schedule and the employer's needs. Students should be employed for the entire school year.1 credit per semester for class and on-the-job training is what the student receives for participating in this program. They are paid the same wages as all other beginning employees within state and federal guidelines. For the Youth Apprenticeship certification the students will need to attain: Core Skills, Safety & Security, Food & Beverage (Dining Area and Kitchen Area) and 450 hours of work experience. 37 Table of Contents
