It’s almost canning season! Ensure you have safe equipment before you start. One of my favorite things about summer is all the fresh produce. Whether it be from the garden, farmer’s market, or grocery store, many fruits and vegetables are in season! With berries, melons, cucumber, tomatoes, squash, and more it's easy to get creative in the kitchen.

•             Make a summer salad. Layer sliced strawberries, chopped onion, spinach, and walnuts, and top it with a tangy vinaigrette. Add a source of protein like chicken, turkey breast, or tofu to make it a meal.

•             No matter what vegetable you need to use up, it can likely be combined with a drizzle of olive oil and your favorite spices to be roasted to perfection and used as a side to your favorite meals.

•             Aim for a nutrient-dense dessert by eating what you want and adding what you need. For example, instead of having an ice cream sundae, try a smaller portion of ice cream topped with fresh fruit.

Cook with the Kids!

Kids often have more free time in the summer. This is a perfect opportunity to get them in the kitchen to master the life skill of cooking!

•             Let them choose from a variety of healthy recipes. Allowing them to choose means they will be more likely to participate in cooking and tasting their healthy meal.

•             Get creative! Use bananas, strawberries, peanut butter, and pretzels to make a creature or fun face.

•             Make fruit pops. Simply, blend fresh berries or melon and freeze it in an ice cube tray with sticks.

Tip: You can also use this fruit blend as ice cubes to flavor your water.
