“Secret Recipe” Guacamole

OK, everyone has their own recipe for this classic, and there are hundreds on the web. Here is my variant on the theme, which I’ll modestly suggest
is better than the rest.
Ingredients
2 (quite ripe) Hass avocados – the smaller, crinkly skinned kind – don’t even bother with those giant smooth skinned abominations labeled by some as
“avocados”). Should definitely be soft and yield when squeezed. If it has a bit of brown inside, just cut that out – the riper, the better!
Unripe = not yummy guac!
1 Red bell pepper
1 Red onion, small Or part of a big one –
they tend to be big, so you’ll have some left over.
2 cloves garlic
1 lime
Soy sauce/tamari
Chinese hot (chili) oil
Fresh Cilantro (optional) - I love this, but if you have
the genetic variant that makes fresh cilantro taste like
soap, skip this step! It will still be outstanding.
Other than the lime, you really can’t
screw this up! If you have properly
ripe avocados it pretty much will
taste fantastic. Serve with your
favorite chips (I like blue corn
myself) and you’re the star of
the party! It will go very quickly!
