TIME TO DINE

In 2022 , Singapore claimed a staggering 52 Michelin starred dining establishments , from street food to high-end restaurants .

The three-star Michelin-starred Julien Royer ’ s Odette is listed as number 36 on the World ’ s Best 50 restaurants . Also with three stars are Sebastien Lepinoy ’ s Les Amis and Tristan ’ s Farmer Zen .
Two new restaurants were added to the two-star list . Cloudstreet , an ambitious restaurant with international influences from chef-owner Rishi Naleendra ; and Thevar , a creative Indian restaurant from chef Mano Thevar , with dishes like korma rack of lamb .
There were a staggering seven new one-star spots including Nae : um , which is Korean-inspired and named after a fragrance . There is also the 12-seat kappo sushi restaurant Hamamoto and Reve , a Franco-Japanese concept .
La Dame de Pic , the Raffles Hotel restaurant from chef Anne-Sophie Pic and chef de cuisine Francesco di Marzio , whose signature dish is pyramidal-shaped Berlingots pasta parcels , also made the list .
But the gourmet offerings stretch to all budgets : the street-food stall on the list is Hill Street Tai Hwa Pork Noodle . And there are plenty of other budget-friendly offerings : 67 restaurants received ‘ Bib Gourmand ’ recommendations . This is the highest number of restaurants selected in both categories since the Singapore Michelin Guide ’ s inception in 2016 .
The Bib Gourmand award was created to recognise establishments that offer diners a value-for-money gourmet experience in Singapore , this is benchmarked at a maximum of SG $ 45 for a three-course meal .
A true foodie haven Delegates are often looking for unique dining experiences , and once again Singapore delivers .
Ocean Restaurant is housed within the world ’ s largest acquariums , with seafood naturally being one of the main features on the menu . Or , because the sea is such a constant element of Singapore , take a 15-minute boat trip to the Smith Marine floating restaurant .
Then there ’ s Nox , where diners will eat in total darkness served by visually impaired staff , and where the cooking is designed to highlight the remaining senses . For the more adventurous , try Absurdities , which offers to take diners on a gastronomic journey . Patrons are advised to wear ‘ something comfortable ’, as they will be expected to be on the move throughout . They might find themselves walking through hidden doors that transport them into a mystical jungle or a Moroccan tent in a desert . The restaurant ’ s location is a secret prior to arrival , but a six-course gastronomic feast is guaranteed .
Perhaps the most unique dining experience of all is to eat at a Hawker centre among the local community . Hawker dining is inscribed into the 2020 UNESCO Representative List of the Intangible Cultural Heritage of Humanity .
From Hawker to haute cuisine , Singapore caters for every type of foodie experience . Visiting will leave you with many feelings . Hunger won ’ t be one of them .
