NEW | Krazy for Kimchi NEW | Traditional Italian Cuisine
Kimchi, a staple in Korean cuisine, is a famous traditional
side dish made with salted and fermented vegetables. As a
fermented food, it is loaded with nutrients and healthy microbes.
You will be introduced to basic fermenting techniques, receive
all the supplies to make your first batch of kimchi in class, step-
by-step instructions, and a recipe handout. Supply fee of $15
cash paid to instructor at class. Class fee: $35. Enjoy the marvelous flavors of traditional Italian cuisine
starting with panzanella, a toasted bread salad with refreshing
summer vegetables in a light vinaigrette. You’ll prepare chicken
saltimbocca using thin sliced prosciutto ham and fresh sage
in a lemon, caper, artichoke, butter sauce. You’ll make potato
gnocchi (Italian dumplings) tossed in a medley of sauces
including, basil pesto, marinara and brown butter with sage
and walnuts. We’ll finish with cannoli, fried pastry filled with
sweetened ricotta and mascarpone cheeses, served on a pool of
chocolate sauce, garnished with pistachios. Class fee: $55.

Lefse is a traditional, soft Norwegian flatbread and a treasured
holiday treat in Minnesota. Gain knowledge of how to make and
bake the dough. Learn the proper way to serve and store lefse.
Come ready to sample your creations. This is a hands-on class.

Come celebrate the fall tradition, German style, with sauerbraten
(tender pot roast in a tangy sweet and sour sauce), beef roulades
stuffed with pickles, bacon and onion in red wine sauce,
schweinshaxe (pork ribs and sauerkraut), and weiner schnitzel
(chicken tender lightly breaded and sauteed with fresh squeezed
lemon and herbs).You’ll learn to prepare spaetzle, potato pancakes
with applesauce and sour cream, kartoffelkloesse (dumplings
topped with buttered bread crumbs) and braised red cabbage.
We’ll finish with a classic Black Forest cake. Class fee: $55.

Simple Sauerkraut at Home
Fall is harvest time and sauerkraut is a great way to preserve
cabbage. This class is a great starting point and perfect for
anyone who wants an introduction to basic fermentation.
Fermented foods offer gut-healing goodness when prepared
in traditional methods. Includes an introduction to fermented
vegetables, all the supplies to make your first batch of sauerkraut
in class, step-by-step instructions, recipes for other types of
sauerkraut, and three samples of different sauerkrauts. Supply
fee of $20 cash paid to instructor at class. Class fee: $35.
