Pork Tenderloin
Ingredients
• Pork tenderloin
• Asparagus
• Olive oil
• Onion, finely chopped
• Brined peppercorns
• 1 oz. white wine or sherry
• 2 oz. heavy cream
• Salt and pepper
Directions
Preheat oven to 425 degrees. Heat a cast iron skillet
with 1 teaspoon olive oil. Add pork and sear each side
for 2-3 minutes. Carefully place skillet into oven for 5
minutes. After 5 minutes, place green veggies such as
asparagus tossed in 1 tablespoon olive oil into skillet
with the pork. Cook another 7-10 minutes. Remove from
oven and place on cutting board to slice. Allow meat to
rest 5 minutes while making sauce.
Sauce
For the sauce, sauté onion with about a quarter cup in
a tablespoon olive oil. Add brined peppercorns to taste
and an ounce of white wine or sherry. Let it quickly
reduce and add 2 ounces heavy cream with a pinch of
salt and pepper. Slice meat and spoon sauce over top.
