Fresh coconut is delicious and fll of vitamins and minerals , it also tastes great in a smoothie , but go easy on the portion sizes as 100g of fresh coconut contains 271Kcal
This can be used instead of sugar in baking . It has a lower GI than standard granulated sugar and is a healthier alternative with a sweeter taste .
This fairly new dairy-free alternative is great for hose who are lactose intolerant and fancy a change from the soya varieties . It is much higher in fat but also much lower in carbohydrates .
There are two types of coconut milk widely available - one is about 8 % coconut cream mixed with water , sugar and preseravtives , the other mixed with rice milk . Both have similar kcal content to soya milk and semiskimmed milk but a much lower protein content so try and choose one with added vitamin D for additional health benefits .
