Alfajores
Kitchen hack: If you’re tight for time, pick up the
Dulce de Leche mixture at a local supermarket.
INGREDIENTS
Cookies
1 cup butter, room temperature
1 cup sugar
3 eggs
3 egg yolks
2 cups cornstarch
1/2 cup flour
1 tsp baking powder
1 Tbsp vanilla extract
coconut flakes
4 tsp of cocoa (optional)
Dulce de Leche Filling
4 cups milk
1 cup sugar
1 tsp vanilla extract
1 tsp baking soda
1/2 cup corn syrup
METHOD
Cookies
1. Preheat oven to 325°F
2. Mix the butter with eggs, sugar
and vanilla extract.
3. In a separate bowl, mix flour,
cornstarch and baking powder.
4. Combine all ingredients, mix and
keep in the fridge for 1/2 hour.
5. Roll out dough and cut into
rounds.
6. Bake for 4-5 mins.
7. Remove from heat, let cool
completely on wire racks.
Dulce de Leche Filling
1. Bring milk mixed with sugar and
vanilla to a boil.
2. Reduce heat to minimum and add
baking soda.
3. Stir constantly for 3 hours.
4. Periodically check the consistency
and adjust it by adding corn syrup.
4. Set aside and let cool.
TO ASSEMBLE
1. Fill piping bag and squeeze on the
flat side of the alfajores.
2. Sandwich two cookies together
and slightly twist to create a bond.
3. Sprinkle coconut flakes on sides.
