Directions
1. In a large skillet add oil, heat the oil over medium heat. Add the onion and garlic and cook for 5mins then add chopped celery and parsley and cook for 4mins or until tender. Add shrimp, scallops and mussels to skillet, sprinkle salt
and pepper and sautee into the onion, garlic, parsley and celery mix for 5mins.
2. Now add the white wine and balsamic vinegar and cherry tomato, stir in for 1 min almost in a folding motion. Add 2 cups of water and let simmer on low to medium heat uncovered, for about 2mins , or until liquid is reduced by about one-third. Gently stirring only once or twice 3. Add your bacon bits which will bring a little smokey flavor to your dish then chop some fresh parsley to garnish your plate. Serve in shallow bowls with Garlic Chips or any type of dry bread or croutons.
