The Kilted Chef , Alain Bossé , has travelled the world from kitchens to convention centres sharing his expertise and love for buying and eating local ingredients with people near and far . With his signature tartan kilt , proud Acadian heritage and undeniable flair for cooking with local ingredients , he has earned a reputation as Atlantic Canada ’ s culinary ambassador . Below is just one of his signature dishes .
Acadian Seafood Chowder
Ingredients
225g Lobster meat 225g scallops 450g haddock 8 tbsp butter 3 tbsp minced onions 1-2 tbsp salted onions 1kg cubed potatoes 1.8l water pinch of salt & pepper ¼ can evaporated milk
Method
1 . MELT 4 tablespoons of butter in a large pot .
2 . ADD the lobster meat and sauté , then remove the lobster and set aside .
3 . MELT the remaining butter and sauté onions until translucent , add your potatoes , salt and pepper and stir .
4 . ADD the water , bring to a boil and then reduce to a simmer .
5 . COOK until the potatoes are al dente .
6 . INCORPORATE the seafood , bring to a simmer and finish with evaporated milk .
