PRACHI DHABAL DEB, TELL US A BIT ABOUT YOURSELF AND YOUR CAKE DECORATING BACKGROUND. I am a royal icing artist based in Pune, India. I am the founder of Cake Décor India – Royal Icing Art. I had started my cake making journey in 2012. Overtime I started specializing in cake decoration using royal icing, ever since I got an opportunity to learn this art from Sir Eddie Spence, MBE. I had been pursuing royal icing art since 2015 and have been a Cake Masters Awards Finalist under this category in 2017, 2018 and 2019. I have also been awarded by Cake Masters as amongst the top 10 cake artist in India in 2017 and 2018 and had been in the jury for the Indian Cake Awards in 2019. YOU HAVE RECENTLY LAUNCHED A VEGAN ROYAL ICING PRODUCT, TELL US WHAT VEGAN ROYAL ICING IS AND HOW THE CONCEPT CAME ABOUT. Yes, I have launched my vegan royal icing in association with an India company called Sugarin. In this royal icing, we have replaced the egg white with aquafaba (chickpea water) to substitute the protein.
