Recipe What you’ll need Umino spinach pie Credit: Nomkhita Sontsonga, Seed to Table B-Living Issue 4, 2017 200 g spinach, fi nely chopped 200 g leafy greens of your choice, fi nely chopped 500 g mixed vegetables (such as peas, carrots and corn), fi nely chopped 1½ cups of mealie meal 1 cup of water 1 tablespoon of olive oil Herbs and spices to taste Method 1. Mix the mealie meal with water and set aside. 2. Throw all the chopped vegetables in a pot with a little bit of water and the olive oil. 3. Add the spinach and greens as well as any herbs and spices you prefer. 4. Allow to steam for about 10 minutes, or until most of the water has evaporated. 5. Add the soaked mealie meal to the pot. 6. Cover and let it cook for 4 more minutes
