Morning Sunshine Smoothie!
Ingredients:
-1 cup low-fat vanilla yogurt
-1/2 cup powdered skim milk
-2 tbsp flax seed powder
-2 tbsp vanilla-flavored
soy protien powder
-1 cup chilled crushed pineapple
Directions:
-Mix in food processor or blender and purée.
-Serve cold.
Black Bean and Plantain Burritos!
Ingredients:
-2 tbsp vegetable oil
-2(15.25 ounce) cans black beans, drained and rinsed.
-1/4 cups salsa
-1 tsp dried oregano
-1 tsp ground cumin
-1 tsp ancho chilli powder
-1 yellow plantain, peeled
-2 (9in.) whole wheat tortillas
-4 tbsp queso fresco, or other white crumbly cheese
-Snipped fresh cilantro for garnish

Firey Indian Potatoes!
Ingredients:
-6 large potatoes, peeled and cubed
-3 tbsp vegetable oil, or more as needed
-5 dried red chiles, or to taste, crushed
-1 tbsp mustard seeds
-Salt and freshly ground black pepper to taste
-1tbsp ground turmeric
-1 tbsp red chili powder-1 cup chopped fresh cilantro for garnish
-1 tbsp ground coriander
