how do you gauge feedback and deal with issues that may arise with guests ?
Social media and review sites are great ways to monitor how we ’ re doing and what guests are saying about us . If guests have an issue we love to make it right on the spot and want the opportunity to do so . Fortunately , we don ’ t have too many negative reviews and our team here , from the bartenders and hostesses to the cooks and support staff , all really do an excellent job . I couldn ’ t be prouder of such a great team .
do you ever find time to eat at your own restaurant ?
I eat at the restaurant around 4-5 times a week . Our menu is huge and with the addition of dinner specials , lunch specials , blue plate and the Sunday brunch menu , there ’ s plenty of delicious options to choose from . how do you build a successful restaurant team ?
Good structure is the foundation for an excellent team . A restaurant has to have a plan in place and you need to hire people who can help guide the restaurant to its goals all while still paying attention to the details . David Phillips , our General Manger , who has been with us for 13 years , and our chef and assistant manager , who have each been with us for over 6 years , all do an excellent job of balancing the big picture with the day to day needs .
do you have any advice for someone interested in opening their own restaurant or business on 30a ?
30A is a great place to own and operate a business . Anyone who is seriously interested in opening a restaurant needs to have some experience and unique concept . The right location is also a crucial factor . You will also want to keep in mind that generally your budget needs to be more than 50 % of what you originally thought and you always want to have some money in the bank during off season . Even though the shoulder season is slowly disappearing , there will always be challenging times when having anything extra in your coffers will help .
what , s the story with the dollar bills on the wall ? how many do you guys estimate are currently on the wall ?
One of our shuckers hung the first bill over the oyster station . The bills started accumulating there until it filled up the bar , dining room and every empty spot on the walls . People love to find their bills from previous vacations . People mark their wedding from getting married on the beach , anniversaries , family vacations , sports teams etc . It ’ s really turned into something very cool . We ’ ve never taken the time to count them but I ’ ll tell you there ’ s quite a few .
