Shredded sprouts
SERVES 4-6
• Oil
• 1kg sprouts ( or 1 sprout stalk ), finely shredded
• 200g pre-cooked chestnuts , chopped
• Maldon Garlic Sea Salt
• Knob of butter
1 Heat the oil in a large pan set over a high heat . Add the sprouts and chestnuts , then fry for 10-15 mins – a bit of caramelisation is good . 2 Finish in the butter and season with garlic salt .

Ultimate roast potatoes
SERVES 4
• 1kg Maris Piper or King Edward potatoes , cut into quarters
• Maldon Sea Salt
• 100ml vegetable oil
1 Heat the oven to 200C / 180C fan / gas 6 . Drop the potatoes into a large pan and pour in enough water to barely cover them . Add salt , then wait for the water to boil . As soon as the water reaches a full rolling boil , lower the heat and simmer the potatoes for 10 mins . Drain and allow to dry . 2 2 . Meanwhile , pour the vegetable oil into a roasting tin and heat in the oven for a few minutes so it ’ s really hot . Roast the potatoes in the pre-heated oil for 35-40 mins until golden and crispy .
