Mushrooms on toast with fried duck egg
SERVES 2
• 2 slices sourdough bread
• 70g butter , plus extra for the toast
• 2 garlic cloves , finely chopped
• 350g wild mushrooms
• 4 thyme sprigs , leaves stripped
• 2 duck eggs
• black truffle , to serve ( optional )

1 Put a 30cm HexClad hybrid pan over a medium heat . Once hot , add the sourdough and toast on each side for 1-2 mins until golden . Set aside . 2 While the bread is toasting , put another 30cm HexClad hybrid pan over a medium-high heat and add 50g butter . Once the butter is foaming , add the garlic , wild mushrooms and thyme . Fry for 5-6 mins and season generously . 3 For the eggs , put 20g butter into the sourdough pan and place over a low-medium heat . Once melted , crack in the duck eggs and fry to your liking . 4 Butter the sourdough toast and divide between two serving plates . Top each slice with the wild mushrooms and a duck egg .
