CHEESY GOULASH

This goulash is simple but packed full of flavour . Perfect for a cold evening . If you share it with friends , you will be surprised how quickly the pot will be empty !
Total time : 45 mins Serves : 6
Ingredients
• 2 tbsp extra-virgin olive oil
• 1 medium yellow onion , chopped
• 2 cloves garlic , minced
• 500g ground ( minced ) beef
• Pink Himalayan salt
• Freshly ground black pepper
• 1 tbsp tomato paste
• 1 1 / 4 cups beef stock
• 1 x 410g can tomato puree
• 1 x 410g can diced tomatoes
• 1 tsp Italian seasoning
• 1 tsp paprika
• 1 1 / 2 cups elbow macaroni , uncooked
• 1 cup grated cheddar
• Freshly chopped parsley for garnish
Directions
1 . Heat the oil in a large skillet ( frying pan ) over a medium heat . Add the chopped onion and cook for about 5 minutes until soft . Add garlic and cook for another minute or two .
2 . Add ground beef and cook for about 6 minutes until no longer pink . Drain fat and return to pan . Season with salt and pepper .
3 . Add tomato paste and stir to coat , then pour in stock , tomato puree and diced tomatoes . Season with Italian seasoning and paprika and stir in macaroni . Bring to a simmer and cook , stirring occasionally , until pasta is tender , about 15 minutes . 4 . Stir in cheese and remove from heat . 5 . Garnish with parsley before serving .
