The culinary competition challenges teams to prepare a three-course meal within one hour using only portable equipment without electricity. Students must demonstrate knife skills, sanitation standards, communication, and refined culinary technique while presenting their dishes to a panel of industry judges. They start practicing in the fall. This year’ s first-place culinary team from King Tech High School delivered a menu that skillfully showcased flavor, precision, and creativity. Their three-course menu highlighted Alaskan ingredients and thoughtful balance, featuring seared scallops, smoked salmon lox buckwheat crepes, and an espresso tart paired with a delicate matcha tuile and bright raspberry reduction. Mushrooms played a starring role in the menu, adding depth and complexity throughout the dishes as students cooked along this year’ s thematic focus.

In the restaurant management competition, students present an original restaurant concept to judges, including menu design, marketing strategy, financial planning, and operations. Teams must defend their concept during a live presentation and answer questions from industry professionals. Taking first place in the management was Delta High School with their concept“ Tallow and Tide,” an Alaskan fish taco truck celebrating coastal flavors and accessible street food.
