Driehoek Sauvignon Blanc 2013
This month’s choice for white wine is a Sauvignon Blanc from the Cederberg area called Driehoek. This wine pairs
especially well with light summer meals like chicken and seafood. While this wine is has an exceptional crisp finish
on the palate, on the nose there is a lovely combo of citrus and passion fruit. Because if it lightness it is also great
to use in casseroles or light creamy pasta sauces. Try the wine in this recipe:
Clam Pasta
1kg clams in their shells
5 cloves garlic, roughly chopped
Handful of flat leaf parsley, chopped
250ml Driehoek Sauvignon Blanc
Extra virgin olive oil
2 teaspoon dried chilli flakes
Flaky salt
125ml fresh cream
Freshly ground black pepper
Linguine pasta
Method:
Put a pot of water on the boil and add the
clams, wait for the clams to open and set
them aside as they will be added to the sauce
and pasta later. While the clams are boiling,
fry up the garlic and chilli flakes in the olive oil
until the garlic is soft. Add the wine and let it
simmer for about 3 minutes.
Add the cream and simmer for another 3
minutes.
Add the salt and pepper to taste.
Once the seasoning is perfect add the drained
clams as well as the cooked linguine pasta to
the sauce and toss until the sauce coats all the
clams and pasta.
Add the parsley as the finishing touch and
enjoy with a glass of Driehoek Sauvignon
Blanc.
