Livestock play a central role in the transfer of energy that plants have gotten from the sun into food for humans . Energy from the sun allows plants to produce cellulose . Cellulose is the most abundant organic compound on earth . Humans are unable to digest cellulose , but ruminant animals such as cattle and sheep can digest it .
