BLACK RICE

INGREDIENTS (4 UNITS)

- 400g. medium grain rice

- 1l. of fish broth

- 500g. squid

- 4 bags of squid ink

- 300g. onion

- 2 garlic’s cloves

- 2 large and ripe tomatoes

- 80 ml. of olive oil

- Salt

- Aioli to accompany (optional)

RECIPIES

METHOD

1. Clean the squid and cut it into tiny pieces, peel the onion, the garlic and the tomatoes and finely

chop them.

2. Put to heat, in a pot, the broth.

3. Heat some oil on a paella pan and then add the chopped squid (it must be well dried).

4. When the squid is golden, remove it to a plate trying to get the maximum oil in the pan.

5. Add on the pan the onion, and the garlic and when they become golden add the chopped tomato.

6. 2 minutes after add the rice and squid ink while you mix it well, and then add the hot broth.

7. Add the squid and add of salt to your liking.

8. Leave on high heat for 10 minutes and then lower to medium heat. And when the rice is finished

put it away from the fire and let it stand for 5 minutes.

9. Serve the rice and accompany it with aioli if you want and eat!
