The people of Sardinia in Italy, and the Greek island of Ikaria, use wheat throughout their lives to nourish themselves. These populations live to be 105 or more years old, in good health and with all their potential, physical, mental and spiritual. These curious facts guide us to reflect on what healthy habits we can have today to live fully in well-being.

 

These populations and others that are called Blue Zones today, use wheat, barley and rye to make bread. Today it has been studied that most of these grains provide carbohydrates and glucose, however, by consuming them whole and with natural fermentation, they can promote health and longevity.

 

Red rice has great benefits, such as reducing cholesterol, it has low glucose levels, it is satiating, it has a high content of iron and magnesium, vitamin B6 that balances moods, it contains Zinc and selenium, it protects the bones, it favors the absorption of calcium, among others. Another grain that is recommended to improve nutrition is white, red and black quinoa. Its main nutrient is a carbohydrate, 4 percent is amino acid and 1 percent fat, it is rich in vitamins and fiber.

 

These foods are recommended to be eaten with protein and fat, to avoid raising the body's glycemic levels.
