Sesame Seeds or Aioli
A holistic approach to well-being
An ancient and significant oilseed, sesame has played a role in human survival, mysticism, and nutrition; it is a healthy food, rich in essential fats and micronutrients.
With a history dating back 5,000 years, it is native to Africa and India and has since spread across the globe.
Used in ancient Egypt and Greece for its healing properties, it served as a symbol of immortality and vitality.
By the 17th century, sesame was used as a source of vegetable fat for both cooking and lighting.
More than 80% of the sesame seed consists of healthy, unsaturated fatty acids—specifically oleic acid (Omega-9) and linoleic acid (Omega-6)—which help regulate and lower "bad" (LDL) cholesterol levels in the blood. It also contains lecithin, a natural fat emulsifier that supports the function of nervous tissue and the brain, as well as phytosterols, which block the absorption of cholesterol in the intestines.
Sesame seeds provide bioavailable calcium, 25% protein (including methionine, which is essential for metabolism), iron, and zinc; these nutrients boost the immune system and support collagen production.
They contain unique antioxidants—sesamin, sesamolin, and sesamol—that prevent cellular oxidation, protect the liver, and help prevent hypertension.
Rich in fiber and B vitamins (B1, B3, B9) as well as vitamin E. It is recommended to lightly toast and then crush or grind the seeds (such as in the form of tahini).
