Sweet Pear Salad MAKES 4 INGREDIENTS 1 cup pecans ⁄ 4 cup local maple syrup Pinch sea salt 1 ⁄ 2 cup fresh cranberries Olive oil Salt and pepper 4 cups wild arugula 5 ounces goat cheese, crumbled 2 pears, sliced 1 DRESSING ⁄ 2 cup white balsamic vinaigrette ⁄ 4 cup local maple syrup 1 ⁄ 4 cup extra virgin olive oil Pinch of salt and pepper 1 1 DIRECTIONS • Place pecans in a roasting pan and roast on 350 degrees until fragrant — about 5 minutes. • Remove from the oven and drizzle with maple syrup and sprinkle with sea salt. • Roast cranberries at 350 degrees for 10 minutes with a drizzle of olive oil, salt and pepper. • Remove from oven and cool. • While cooling, combine the dressing ingredients in a bowl • In another bowl, combine arugula, cranberries and pecans. • Toss with dressing and top with goat cheese and sliced pears. FEELING ADVENTUROUS? Add maple sugar to the raw pear edges and torch them for a sweet and smoky crunch. Maple Gin and Pear Fizz INGREDIENTS 1 1 1 ⁄ 2 1 ⁄ 4 1 2 1 pear cup water cup raw sugar teaspoon of cinnamon teaspoon maple syrup ounces gin* ounce club soda DIRECTIONS • In a blender, puree pear with water. • In a saucepan, combine pear puree, sugar, cinnamon and syrup. • Simmer until sugar is dissolved. Remove from heat and cool. • Add gin and pear liquid to a cocktail shaker filled with ice. • Shake and pour into a cocktail glass. Top with club soda. • Garnish with a fresh pear slice or frozen raspberry. *This can be enjoyed with or without the gin.
