The Ernesto Delgado property features a wide variety of menu options including vegan — like the handcrafted vegan Tamale de Mercado con Hongos filled with mushrooms and sliced poblano peppers . For carnivores , the Chile en Nogada ( the national dish of Mexico ) features a roasted poblano chile stuffed with beef and pork , raisins , nuts , herbs and white walnut sauce .

Brissa & Co . is the newest concept from the Heredia family , founders of Carmelita ’ s Mexican Food in Roseville and Fair Oaks . The brightly colored bakery / market named for ( and run by ) granddaughter Brissa Heredia opened in Folsom in 2019 and offers classic fare like quesadillas and burritos , delectable mashups like chicken mole poblano pizza and traditional desserts like Mexican wedding cookies , flan and shellshaped conchas pastries , as well as custom creations like the decadent churro cake that ’ s ( almost ) too pretty to eat .
