VANILLA BEAN PANNACOTTA
WITH SWEET VEGETABLES AND CHOCOLATE CRUMBLE
INGREDIENTS
Pannacotta Cream
Sweet vegetables
Chocolate Crumble
500 ml fresh milk
2 baby beetroots
100 grams all-purpose Flour
500 ml double cream
1 turnip
100 grams cocoa powder
1 fresh vanilla pod
4 cherry tomatoes
50 grams sugar
175 grams caster sugar
2 baby carrots
100 grams soft butter
6 (30 grams) gelatin leaves
500ml water
400 grams sugar
Balsamic Syrup
250ml apple cider
100 ml Balsamic Vinegar
4pcs star anise
50 grams Demerara (brown) sugar
10 grams cold butter
Method
Pannacotta: Add cream, sugar and vanilla pod to milk and bring mixture to a boil. Turn off heat, add gelatin leaves, mix well and let this rest for 5
min. Strain this mixture through a fine sieve and pour into a container. Chill for about an hour till it becomes firm, soft and creamy.
Sweet vegetables: Peel and cut the vegetables (except tomatoes) into quarters. Bring them to a boil in water with the apple cider, sugar and star
anise. Let this simmer for about an hour until soft but not mushy. The veget
