ating the rainbow
– that’s the healthy
approach to eating
and is one of the basic
fundamentals taught in the
Healthy Teachers/Healthy
Kids cooking classes offered
to Evergreen Public Schools
(EPS) teachers. This year
EPS partnered with Whole
Foods Market and offered
three series of hands-on
cooking demonstrations.
Registered Dietitian and
Healthy Cooking coach Sara
O’Leary, in conjunction
with Whole Foods Kids
Foundation, taught the
classes that are designed to
meet the OSPI-developed
health assessment. By giving
teachers the tools to serve
as healthful role-models for
their students, the hope is
that there will be a trickle-
down effect to families and
the community.
Each two-part 1 ½
hour class was free to
teachers. The healthy eating
and cooking techniques
provided by coach O’Leary
included an overview of
regularly eating the full
rainbow of foods as well
as incorporating simple
and healthy recipes into a
balanced diet. “This class
is especially designed to
arm teachers, principals,
and school staff with
the knowledge and tools
necessary to transform their
own health and wellbeing,
serve as healthful role
models for their students,
and become agents of
change in their schools and
communities. This engaging
workshop provides teachers
with an overview of the basic
principles of healthy eating
and cooking that can shape
strategies for improving
health for themselves and
their students.” said O’Leary.
Plans for more classes for
teachers, as well as students,
are part of the long-range
goal as EPS continues to
challenge the community
to move toward a healthier
lifestyle. For more
