STRAWBERRY CHIA PUDDING

Serves : 4 - 6
Chia seeds are amazing really – high in fibre and packed with nutrients . You can use just about any yoghurt , fruit and nuts when serving ( coconut shavings are a nice addition ). Go for a variety of different textures and colours , and something with a crunch on top .
INGREDIENTS
} 2 cups calcium fortified almond milk } 1 large punnet of strawberries } 1 tsp vanilla extract } 2 tbsp maple syrup } ½ cup white chia seeds
To serve } Sliced banana } Berries } Strawberry flavoured Greek yoghurt } Walnuts
METHOD
1 . Add almond milk , washed and chopped strawberries , vanilla and maple syrup to a blender and process for 30 seconds .
2 . Pour mixture into a large bowl or container , add the chia seeds and mix thoroughly , then refrigerate for six hours or overnight ( I try to go back after a few hours and give it another mix – ensuring there are no clumps ).
3 . In the morning , you will have a pudding consistency mixture – you can stir through more liquid at this stage to reach your desired texture .
4 . To assemble your pudding , add three large dessert spoons of pudding into your glass , dollop on a large spoon of yoghurt , then add sliced fruit and top with walnuts and an extra drizzle of maple syrup .
5 . Chia pudding can be stored for five days in a sealed container in the fridge .

INGREDIENTS
} 4 frozen bananas } 1 / 2 cup soy milk } 1 tsp vanilla essence
Optional toppings to serve } Candied walnuts } Strawberries } Cacao nibs
METHOD
1 . Combine all the ingredients in a food processor or blender and blitz until smooth .
2 . Serve immediately , topped with garnish of your choice .
