STRAWBERRY AND HALOUMI SALAD

Serves 6
Sweet , savoury and nutty , Joel shows us strawberries don ’ t just belong in fruit salad .
SUMMER RECIPES SUMMER 2020-2021
INGREDIENTS
Salad } 150g haloumi ( cut into 1cm slices ) } 1 tbsp extra virgin olive oil } 120g spinach ( washed and dried ) } 250g strawberries ( hulled and quartered ) } ½ cup unsalted macadamia nuts
( roughly chopped ) Dressing } 3 tbsp extra virgin olive oil } 1 tbsp honey } Juice from 1 lime } 1 tbsp mint ( roughly chopped ) } Pinch of black pepper
METHOD
1 . Pour one tablespoon of extra virgin olive oil into a non-stick frying pan and cook the haloumi over a low-medium heat . Fry for 2-3 minutes on each side or until golden brown . Set aside to cool .
2 . Add the spinach , strawberries and cooled haloumi to a large salad bowl .
3 . To make the dressing , add all the ingredients to a clean jam jar and secure lid tightly . Shake well .
4 . Drizzle the dressing over the salad and toss well . 5 . Sprinkle with macadamia nuts before serving .

SUMMERY COCONUT AND MANGO BIRCHER MUESLI

Serves 2-4
This combination of wholegrains and seasonal fruit makes for perfect summer .
METHOD
INGREDIENTS
Muesli mix } 2 cups rolled oats } ¼ cup shredded or flaked coconut } ¼ cup dried raisins / diced dried fruit of your choice } 1 tsp mixed spice } 1 tsp ground cinnamon } Zest of 1 orange
Bircher } 2 cups of muesli mix ( see above ) } 1 cup diced mango ( fresh or frozen ) } 1 cup of Greek yoghurt } 1 tbsp of lemon juice ( mixed in the yoghurt ) } ½ cup milk of your choice
( we suggest cow ’ s milk ) } ½ cup apple juice } 1 tbsp honey
1 . Place all ingredients of the muesli mix into a large bowl . Toss to combine thoroughly . Store the muesli mix in an airtight container , in a cool part of your pantry for up to two weeks .
2 . To make the Bircher muesli , combine the apple juice , honey , mango , milk , muesli mix and yoghurt into a large bowl . Mix well to combine the Bircher . Allow to sit in the fridge , covered , overnight ( or at least four hours ).
3 . In the morning , serve your Bircher muesli with any toppings you please . Our favourite combination is fresh berries and a handful of toasted almonds .
