EASY MINI QUICHE BOATS

Makes 6
A simple recipe to add vegetables to your meal – the kids will love them . Enjoy these quiche boats at any time of the day .
INGREDIENTS
} 6 mini tortilla multigrain boats } ½ cup baby spinach ( roughly chopped ) } ½ cup red capsicum ( diced ) } ¼ cup cheese ( grated ) } 3 eggs ( lightly whisked ) } ¼ cup creamed corn
METHOD
1 . Pre-heat oven to 180 ° C and line a baking tray with baking paper .
2 . Arrange tortilla boats on lined baking tray .
3 . Place spinach in tortilla boat . 4 . Top with capsicum and cheese . 5 . Combine egg and creamed corn in a bowl . 6 . Add egg mixture to tortilla boat
( don ’ t overfill ).
7 . Cook for 25-30 minutes or until cooked ( when golden and mixture springs back at touch ).
Notes You can substitute boats with bread or mountain bread and place in large muffin trays to hold shape . You can use other vegetables – our favourites are grated pumpkin , grated sweet potato and grated zucchini .

MUESLI COOKIES

Makes 12
These muesli cookies are a super simple recipe for little hands and a great way to use up any overripe bananas .
INGREDIENTS
} 3 ripe bananas } ½ teaspoon ground cinnamon } 2 cups rolled oats } ½ cup desiccated coconut } ½ cup craisins ( dried cranberries ) or sultanas } ¼ cup olive oil
METHOD
1 . Preheat oven to 180 ° C . 2 . Mash bananas in a medium-sized bowl .
3 . Add all ingredients and mix with wooden spoon .
4 . Line a tray with baking paper .
5 . Roll mixture into balls ( about a tablespoon per ball ) and place on baking tray .
6 . Press each ball to flatten slightly .
7 . Bake for about 20 minutes or until browned .
8 . Allow to cool on baking tray .
Notes These cookies can be frozen ( frozen cookies can be placed in your child ’ s lunch box to defrost during the morning ). Use any dried fruit you like in place of the craisins – diced dried apricots work well .
