Fibre-packed recipe :
Vegetable rice loaf
When sliced into pieces, this loaf makes a great fibre-enriched lunchbox inclusion.
Ingredients
1½ cups cooked brown rice
1 cup grated reduced fat cheddar cheese
1 large zucchini, grated
1 large carrot, grated

/4 cup pitted black olives, chopped
125g can sweetcorn kernels
¾ cup self-raising flour
4 eggs
½ cup reduced fat milk
