Shopping list: Left over turkey Tinned chicken soup Onion Dried Thyme Pre-made puff pastry £Free! £0.24 £0.95 £1 £1.25 You will need: 2 medium sized tomatoes 1 large onion/ 2 smaller ones 1 teaspoon of puree Half a cheese ball 1/2 a roll of pastry This pie recipe depends on the size of the dish you use. An average pie dish is around 20cm and maybe 5cm deep. So for the mix use a couple of small handfuls of turkey, 1 onion and approx. just under half a tin of soup. If you make too much mix it will stay fresh wrapped and in the fridge for three days or put it in an old takeaway tub and freeze it, it will be fine for about a month. Use your eyes and trust your own judgement on amounts. Don’t panic if it’s not the right amount just remember it for next time. 1. Roll the pastry and measure around the dish, you want it a few centimetres bigger than the dish . 2. Turn oven to 200°C/Gas mark 6 3. Chop onion in a frying pan with a drop of oil. 4. Fry on a medium heat for 2 minutes or until golden. 5. Add some chopped up turkey (left over is best!) 6. Add HALF a tin of chicken soup. Put the rest in a bowl covered with cling film, eat within 3 days! (Remember you only want enough for a sauce not a stew) 7. Stir to mix it all up. 8. Put your mix into the pastry dish with your pastry on top. 9. With a fork, squish the edges of the pastry to the edge of the dish to form a seal. (if you have a pastry brush, use it to brush some milk over the top, if you don't- don't worry) 10. Bake in the over for 15/20 minutes or until the pastry is nice and golden. 11. Serve with mashed potatoes and peas. Note: you cold use any meat, just alter the soup to go with it. Veg soup goes with everything! Chicken with ham, oxtail with beef etc.
