The Caspian is one of the few places on the planet
where sturgeon lived in the wild for 30 million years
and survived until the 21st century. At the end of the
20th century, 90% of black caviar was mined in its
waters. Now commercial black caviar is produced in
fish farms from Venezuela to France, but the taste,
according to experts, differs from the Caspian, as well
as the price, which ranges from 800 to 3000 euros per
kilogram, depending on its origin. In Kazakhstan, the
extraction and sale of black caviar is restricted due to
the high degree of depletion of sturgeon stocks in the
Caspian waters.

Unfortunately, there’s much imitation and artificial black caviar on the market. This may be
colored pike or a product of a mixing dye, gelatin and bone meal (or fish meal). The price
of such caviar is not more than 100 rubles per kilogramme, but often it is sold as genuine
caviar 500 times more expensive than its true value.
Check for suspicious eggs by using hot water to pour over them, the gelatin product in it
will dissolve and the eggswill lose their color.

of wild black caviar
was mined.
The fish was determined to be 70 years old
and weighed 966 kilogrammes, producing
120 kilogrammes of caviar. Now, one fish can
produce only 1.5-3 kilogrammes.
