When we dined at the Domador , in Elma , there was a variety of family groups . Kids under twelve could enjoy the Little Compas section of the regular menu , which serves those 12 years and under . For those over 12 , there is an additional $ 2.00 . Some kids required one of the high chairs or boosters , and others sat in the regular chairs . The six choices are all $ 5.99 each and are numbered from Kl to K6 . Choices are Burrito & Taco , Taco & Enchilada , Taco with rice & beans , Enchilada with rice & beans , Chicken Tenders & papas , and Cheese Quesadilla & rice . Instead of “ never on Sunday ,” kids eat free on that day .
So many Mexican restaurants claim they have the best food ; Domador claims the best Mexican food in Elma . We found very good food with equally good deals , starting with the free chips and salsa to the fantastic fried ice cream . The addictive chips comforted us through a slight wait . We dipped them in the red salsa , that delicious sauce coming fresh in the uncooked salsa cruda and the salsa verde , which delivered green tomatillos with green chilies and cilantro , a . k . a ., coriander . The bottled sauces were more than mild , with a mouth-searing effect , yet having the taste of lemon , apples , and herbs .
We ordered Fajitas ($ 19.99 ), a huge selection of grilled steak , chicken , shrimp , and chorizo cooked with grilled onion and red bell pepper covered in queso . This was served in a stone bowl with Pico de Gallo , Mexican rice , and beans . Did you know that Pico de Gallo ( translation : beak of rooster ), a condiment of finely chopped fresh ingredients including tomatoes , onion , chiles , and cilantro , as well as salt and lime juice , was once purportedly eaten with the thumb and fingers , an action that resembles a rooster ’ s pecking beak ?

Another specialty I ’ d order next time is the Mexican Flag Enchiladas ($ 14.99 ), three chicken enchiladas , covered with green , white , and red sauces ; cheese , guacamole , salad , sour cream , tomato and Mexican rice .
Burritos come in a variety of four choices . The El Domador Burrito ($ 14.99 ) is filled with a choice of steak or grilled chicken , served with Mexican rice and beans , and topped with queso , green sauce , and sour cream salad . What we especially liked about the Fajitas Domador was that we sampled all the proteins , without having to make a choice , as in other specialties .
For dessert we chose Fried Ice Cream ($ 4.99 ), which was the best version of this favorite . The ice cream was enclosed in a superb batter , instead of the corn flake crust .
In my opinionated knowledge , the same ingredients are used in many guises in a variety of Mexican food combinations , using the proteins , veggies , and sauces to be rolled , stuffed , folded , and above — all savored . We like the power of cilantro and the zest of limes often used in this comforting food . Dad , who grew up in California and ate more Mexican food as a kid and teen than I did , found the fare here to his liking . Grandson Billie , who is part Mexican , found the fare to please his young American palate . I do remember some authentic Mexican food on a vacation in Mexico to which that of the Domador compares favorably .
Time is variable here , with lunch options made available at dinnertime for an extra $ 1.50 . There are seven special lunches at $ 7.99 each offering tasty combinations .
We may repeat our visit to try different combos of the flavors . For now , it ’ s “ Hasta luego !”
