Chef Escalante brings to FireRock is
exciting, and I’m anxious to return for
dinner again.
From FireRock we headed across Casper
to J’s Pub & Grill. Right off CY Ave on
SW Wyoming Blvd, J’s opened in the fall
of 2012. When we arrived, I instantly noted
my first reason to return next summer – the
outdoor patio. The use of wood and stone
is repeated, but with dark red tones added
and a bit more of a modern edge. The
interior has an urban design flare, with
slatted wood, mirrors and the use of white
light.
Tonight our mission at J’s was drinks and
music – and we settled in to listen to the
sounds of Wyoming’s own Blue Marble
Project. [As a quick side – this group mixes
powerful vocals with talented musicians and
they seriously blew my hair back. If you’re
a music lover, give ‘em a like on Facebook!]
Ken & Sondra assured me that good, live
and often local music is the norm at J’s Pub
& Grill. This is a great place to soak up
some tunes while enjoying good grub.
When it comes to the grub, the eclectic
fare at J’s matches the urban interior.
Fish tacos, flatbread pizzas and a variety

of burgers join entrees
such as ‘Whiskey Piggy’
– “Bourbon-mustard
marinated center-cut
pork chop topped with
whiskey-glazed apples,
served over sautéed
spinach, and garlic mashed
potatoes” – and Grilled
American Elk Chop with
bing cherry red wine
reduction sauce. Seriously
yummy, chic fare served
right in central Wyoming
– you can’t get much better
than that.
As J’s closed around us,
we headed back home
with a full belly and a soul
recharged by powerful
music. If you’re in Casper
or heading that way,
put a stop at FireRock
Steakhouse or J’s Pub
& Grill on your to do list – and enjoy
Wyoming grub served in two uniquely
