BEEF STEW AND DUMPLINGS WITH BRIMSTAGE IPA BEER
INGREDIENTS
• 2kg beef shin or chuck large diced
• 1 tbsp plain flour
• 1 tbsp vegetable oil
• 2 onions peeled and sliced
• 2 sticks of celery chopped
• 2 large carrots diced
• 2 cloves of garlic crushed
• 300ml Brimstage IPA
• 500ml beef stock
• 1 bouquet garni
METHOD
• Coat the beef in seasoned flour and fry in batches .
• Place in a large saucepan with the remaining ingredients and bring to the boil for 1.5 - 2 hours .
• Pour into the large casserole dish and season .
• Preheat oven to 180 0 C .
• Mix all ingredients together for the dumplings .
• Roll into 10-12 balls , pop on top of the stew .
• Place in oven for 30 minutes .
• Serve with boiled potatoes .
Dumplings :
• 125g suet
• 200g self raising flour
• Pinch of herbs
• 150ml cold water
