TURKISH KEBAB
For this recipe , ideally you will have a metal or bamboo skewer suitable for the job . You will need quite thick ones so the meat has something to cling on to . It can sometimes be tricky getting the consistency right . If you do have a problem with this don ’ t worry just form little patties instead . You can grill these although they are so much better over charcoal .
INGREDIENTS
• 300g lamb mince
• 200g beef mince
• 1 medium onion
• Good sized bunch of coriander
• 1 tsp cumin
• 1 tsp garam masala
• 1 / 2 tps salt
• 1 / 2 tsp ground fennel seed
• 1 green chilli
• 1 red chilli
• Cucumber
• Greek yoghurt
• Corn flour
• Tomato concasse from 3 tomatoes .
• Fresh mint
• Naan bread , tortilla wrap or pitta bread
METHOD
• Dice the onion super fine . If your knife skills are not the best then use a blender for this . Do the same with the coriander stalks and half the leaves . Also the chillies .
• Combine in a large bowl along with the tomato concasse . If you don ’ t know how to make concasse it ' s really easy and it ' s worth watching a quick You Tube video .
• Now add the cumin , garam masala , fennel seeds , and salt . Combine well and adjust the flavour to your liking .
• Add the mince , get your hands in and work it all into the meat . The trick is to knead like dough and be quite firm with it . The more you work it , the stickier it will get - this is what your aiming for . You can start adding some cornflour to help bring it together and firm it up .
• Once done place in the fridge to rest for an hour or so .
• When you form it on the skewer it helps to put some water on your hand to stop the mixture sticking to your hands and makes it cling to the stick . Once you have done this it ' s a good idea to let it chill in the fridge again to firm up . Just make sure you layer the skewers between cling film to avoid them sticking together . You could in fact store these for up to three days in the fridge .
• For the best results , cook these over coal and warm your bread over the smokey charcoal .
• Load up with thinly sliced onions , red cabbage , grated carrot and shredded iceberg lettuce .
• With the yoghurt make a quick dressing by simply adding finely chopped mint and chopped cucumber with the seeds removed .
