SUMMER SALADS BY MUFFS OF BROMBOROUGH

PINEAPPLE & CHILLI SALSA
This gives a fresh fruity kick to accompany your hot dog , burger or kebab . Really quick and easy to make .
Ingredients
• Coriander
• Mint
• Lime
• Chilli
• Pineapple
• Red onion
Method Cut pineapple into small cubes , add a squeeze of lime and lime zest . Slice and combine all other ingredients .
DEVILLED EGG & POTATO SALAD
A real crowd pleaser , creamy , spicy and full of flavour . A big dollop is a must for any BBQ . Diced ham is an optional extra .
Ingredients
• 500g New potatoes
• 4 tbsp mayo
• 2 tbsp mustard
• 4 hardboiled eggs
• 5 spring onions
• Red onion
• Chilli
• ½ tbsp
• Paprika
• Bunch parsley
• Salt and pepper
Method Boil potatoes until cooked , cool slightly until you can handle them with your hands . Break up into a bowl . Chop up eggs and add to potatoes . Season with salt , pepper & paprika . Chop everything up and add to mixture , add mustard and mayo . Mix well and season to taste .
SWEETCORN AND FETA SALAD
This is a really fresh and tasty salad which is guaranteed to please .
Ingredients
• Sweetcorn
• Beef tomato
• Rocket
• Feta
• Course pepper . salt , olive oil and balsamic vinegar
Method Slice beef tomato and arrange on platter , season with salt & pepper , olive oil and balsamic vinegar . Chop up the feta and in a bowl mix with the corn and rocket . Arrange on top of the tomato and finish with a drizzle of oil and vinegar .
