2 tbsp of olive oil
Sea salt and ground black

Your Butcher will spatchcock a chicken for you or you could use
chicken fillet or chicken thigh meat.
Add ingredients to a mixing bowl.
Add the spatchcock chicken to the marinade.
Rub over the chicken and cover with film.
Leave to marinade for 4 hours or overnight for the best flavour.
BBQ or oven roast.
