The Pink Cadillac
The Pink Cadillac was born from an experiment. At the time, we were exploring a range of sour-style cocktails, searching for something light, refreshing, and perfectly suited to summer. The answer came in the form of a coconut and watermelon sour. Once we created this drink, the search was over. It struck the perfect balance between tropical sweetness, citrus sharpness, and silky texture, and immediately became a staff favourite. Even when offered in small samples to customers, it quickly won fans, with people coming back to order the full serve.
Naming the cocktail was a journey of its own. We knew it had to be musicinspired, but also needed to capture the personality of the drink itself. A few contenders included Californication and Club Tropicana, both playful nods to summertime escapism. The final name, however, arrived serendipitously. While we were brainstorming, Bruce Springsteen’ s 1984 track Pink Cadillac came on, and the fit was undeniable. The song’ s energy, attitude, and iconic imagery aligned perfectly with the cocktail’ s bold colour and vibrant flavour. From that moment, the Pink Cadillac had found its name.
Recipe
• 50ml Malibu Coconut Rum
• 25ml Watermelon Syrup
• 25ml Fresh Lemon Juice
• 1 Egg White
• 4 Dashes Angostura Orange Bitters
Crimson & Clover
Named after the iconic song“ Crimson and Clover” by Tommy James & The Shondells, later immortalised in Joan Jett & The Blackhearts’ legendary cover, this cocktail is as much about nostalgia as it is about flavour. Originally created during the festive season as a warming winter serve, Crimson and Clover combines the bold richness of Jack Daniel’ s whiskey, the nutty sweetness of Disaronno, and the comforting spice of cinnamon. These are lifted with vanilla, fresh lemon, and a sharp cranberry finish.
The name itself was inspired by both the song and the drink’ s striking appearance. Its deep crimson body is offset by the fresh green of its mint garnish, a subtle nod to clover. In fact, Crimson and Clover was once even considered as a potential name for our bar, WILD INN, during our early brainstorming sessions. While the bar found its own identity, the cocktail became one of our signature creations, quickly winning the hearts of guests and cementing its place as a seasonal favourite. To this day, it remains a drink we hold close, which is why it earned a permanent place on our Rocktail menu.

• 15ml Cinnamon Syrup
• 10ml Vanilla Syrup
• 25ml Fresh Lemon Juice
• 75ml Cranberry
