READER COMPETITION IN ASSOCIATION WITH THE ART SCHOOL RESTAURANT A SPECIAL DINNER WITH CHEF PAUL ASKEW AND CHEF TOM BROWN Thursday 8th March 2018 sees The Art School host their first of special events lined up this year - a special dinner with Chef Paul Askew and a fellow Great British Menu competitor, Chef Tom Brown. Originally from Cornwall, Tom Brown worked in restaurants around the South- West including Rick Stein’s Fish, before he met Nathan Outlaw. Tom started working for Outlaw at the St Enodoc Hotel where he quickly worked up the ranks to head chef. After three years, he moved to London to be head chef at Nathan’s eponymous restaurant at The Capital Hotel in Knightsbridge, which was awarded a coveted Michelin star one year after opening. Tom has also appeared on Great British Menu where three of his dishes went through to the final round just narrowly missing out on cooking at the banquet. Paul Askew said “We are thrilled that Chef Tom Brown is able to join us, at the start of what promises to be a very busy and successful year for him.” The evening comprises of three innovative dishes from Tom and three from Chef Askew. Both chefs are passionate about the use of 30 wirrallife.com local and seasonal ingredients, and we are very much looking forward to seeing them in action. With Champagne and canapés upon arrival, six delightful courses with some extra special touches throughout the night, it promises to be an evening to remember. The menu will in clude a glass of Charles Heidsieck Champagne with selection of seasonal canapés, Amuse Bouche & chef ’s snacks, Cured Cornish Monkfish, almonds, grapes & sherry vinegar, Natural smoked haddock, Ormskirk leek & Montgomery cheddar rarebit tart, Pepper crusted breast of cornfed Goosnargh duck with golden beetroot, sweet potato charred chicory & Tales of the Orient red tea sauce, “Blackfaced Suffolk” lamb neck rissotto with pickled cockle & wild garlic dressing, Sirloin of Heswall Galloway beef, leek ash, ox cheek, pearl barley & Celeriac, Pre Dessert, Coconut pannacotta with Guanaja cremeux and spice cake raspberry foam & chocolate soil.
