W FOOD & DRINK L NOW IS THE TIME FOR KINDNESS… BY PAUL ASKEW, CHEF PATRON OF THE ART SCHOOL RESTAURANT This months’ piece has been one of the most difficult to write. I had planned to share with you the progress on our plans for this years’ Grand National Festival, as we transformed the former home Mirabel Topham into The Art School at Aintree. I’d also hoped to share the success of our Mothering Sunday celebration and announce plans for our Easter Sunday luncheon, shedding light on the beginning of spring and the plentiful bounties that come in the change of the season. government we are able to keep the full team employed which was of paramount importance to me as the situation became more serious. Our local suppliers have shown their own initiative by providing complimentary delivery services during these challenging times. Including Edge & Son’s and Ward’s fish, based in the centre of the gastronomic universe! However, none of that is relevant anymore, with the restaurant and Cellars bar under enforced closure from the government until further notice due to the dreaded Coronavirus. I will do all I can over the weeks and months to support my brigade and suppliers from a suitable distance. Of course, focusing on my health and that of my family in the meantime to ensure that the restaurant and Cellars is able to re-open at a time when the government advises it is safe and appropriate to do so. While last week fell nowhere short of an extreme challenge, with advice against dining out and a daily shift in the government’s position, moving ever closer to the forced closure. Although it was difficult initially to see the restaurant close, I do of course appreciate the immense value in the social distancing techniques imposed by the government. It could also be quite rewarding to spend some time away from the business with Helen and Harry. Allowing me to recharge the batteries, work on some new dishes and start the plans for our bigger and better return. Overleaf, I’ve also included a beautiful spring recipe from my Onwards & Upwards cookery book for you to try at home whilst in isolation. I would like to take a moment to thank my fantastic team at The Art School who have completely had the rug pulled from underneath them.
