Ingredients

1 can lentils, drained, rinsed

1 can black beans, drained, rinsed

1 can kernel corn, drained, rinsed

1 can diced tomatoes w olive oil & garlic, do NOT drain

3 different color peppers, chopped

3 green onions, chopped

½ freshly squeeze lime

¼ tsp chili powder

Bell Pepper Bean Salad

Directions

Combine all ingredients in a large bowl and refrigerate.

Mix well before serving.

Enjoy as is, with tortilla chips (lime flavored recommended), in a burrito or over a bed of greens.
