Oleoresins are the ‘semi-solid’ extract which is a mixture of resin and fatty oil. These are
basically the liquid, thick extracts that are primarily used for the colouring and the seasoning of
food in the ‘food industry’. It is prepared by steam distillation. The oleoresins are present in less
volatile, heavier and lipophilic compounds like waxes, fats, resins as well as fatty oils. These are
made from common spices like cardamom, nutmeg, mace, rosemary, nutmeg, ginger etc.
