But at St. Lawrence (page 90), his cozy spot on the East Side, he blends French and Québécois classics with more rustic but polished flavours. Impeccably served with well-chosen wines, mains run the gamut: rabbit leg cordon bleu, duck in pastry with sauce à l’orange, hanger steak with bone marrow and escargots, lingcod en papillote.
