The great outdoors are pretty great—but even better
when they’re on the plate at hawksworth Restaurant
(page 103). Downtown’s fine-dining fixture presents the
BC Spring journey Menu, which explores the province’s
bounty and biodiversity through local and foraged
flavours. The culinary tour includes highlights like hali-
but with pine and elderberry (pictured), First Nations–
inspired smoked salmon, and bison accompani ed by
nettle and wild berries. Now that truly is a bon voyage.
