The Beatles sang about strawberry fields, not laven-
der ones. But they may have changed their tune had
they visited Faubourg (page 103). The French-inspired
patisserie evokes the lavender fields of Provence
with delicate offerings such as a lavender Earl Grey
macaron, blueberry-lavender chausson, and lavender-
strawberry pastry, among others. The fragrant flower
even blooms in lattes and smoothies, too. But take
note: these lavender fields aren’t forever—they’re only
here for the summer.—Jill Von Sprecken
