Winter Magic and Maple Season at Fulton’s, Feb. 17 to April 15, has perfected pancakes, baked beans, and treats like taffy on snow and maple cotton candy. For 170 years, five generations have tended the winding sugar bush trails that are open to snowshoes, skis, and sleigh rides. Its season runs from Feb. 24 to April 8. Maple Fest at Proulx Farm, which is Feb. 25 to April 15, has a large brunch buffet that offers many traditional meals from the Proulx family recipe book, including pea soup, grilled maple ham, local sausages, and maple-glazed carrots. Dedicated to the sweet amber syrup, this festival aims to be the epitome of winter Canadiana. Maple producers offer tradi- tional treats and fun variations on staples like s’mores, poutine, and even beer.
